Tobermory 2005 12 Year Old Fino Cask Finish Tobermory a distillery i tend to enjoy more in it's heavily peated Ledaig form than it's unpeated form and one i've had some odd notes from in the past so interesting to check out some finished in a Fino Sherry cask (yeah I'm not good with Sherry) so this could go one of a number of ways.

Looking at this dram objectively i really shouldn't be that much of a fan, Tobermory I have found in the past to have had something a little funky about it (and not a good funk, almost cabbagey) which works in Ledaig, but not so much in a more gentle Tobermory dram. Add to that a finish in a sherry that is not sweet, as Fino would be along the bitter, yeasty, track rather than against the sweetness of Pedro Ximinez which i tend to enjoy.

The nose on this however is seriously up my street, cheap white chocoalte and crunch apples, some toasted white bread and some definite gentle tarte fruits. The palate is a little more of the bitter notes i expected, but there's enough fruits and ginger/white pepper to make it work.

Really didn't expect to like this but i do, a really interesting complex tasty dram, very nice indeed.

Tasting Notes & Details

Nose

Ok so I was worried but the initial nose on this is lovely, crunchy fresh green apples, a little apple flavoured sweets, white chocolate mice (you know the ones with that cheaper chocolate), a hint of golden toasted white bread, some gentle tarte fruits in the background.

Palate

Toasted white bread, gentle tarte fruits again, a little hint of Haribo tangtastics (without the sour sugar), something a little more bitter greengages maybe, then some grated ginger and white pepper.

Finish

Toasted white bread and a hint of white pepper, really long finish
