Caol Ila 2007 (Signatory Vintage Exclusive to The Whisky Exchange) Hey, it's Ben K here again helping Tom out, this time with a dram that is exclusive to the chaps at The Whisky Exchange, a delightful bourbon cask matured 8 year old Caol Ila .

This confused me at first as it doesn't have what you could call a hugely smoky nature, either on the nose or the palate, there's a definite peat influence but it's more subtle and more of the gentle underlying complexity of Caol Ila is shining through.

This reminds me a lot of the unpeated editions (like the 2013, 2014 and 2016 special releases) which still have an element of peat but allow more of the distilleries natural character through, this is a delicious different dram and one i really enjoyed.

Tasting Notes & Details

Nose

Driftwood, seaweed, chargrilled king prawns with a squeeze of lemon, cold earthy underground cave, single cream, Horlicks with a hit of Islay.

Palate

The smoke is there again with coal smoke and burning church incense followed by a lovely warming big maltiness.

Finish

Deceivingly short but takes a while to come on...tingly and subtle for an Islay.
