Koval is the first new distillery in the Chicago area since the 1800s and they are producing some very interesting whiskeys using various grains, including a Bourbon.
This is their Rye Whiskey, bottled at 40% ABV, which i'm normally not too keen on as i prefer sweeter whiskeys to spicier ones, but this has a lovely balance of both, with sweet dark fruits and floral notes along with sweet and sour pork, very tasty stuff and worth trying for sure.

There's spice coated wholegrain brown bread, then sweeter notes of lightly toasted bread and dark fruits, so,ex floral notes of carnations and floral gums.
Sweet and spicy, like an interesting sweet and sour pork dish, sweet juicy fruity notes and spicy oriental spices although with those bready notes
